The EverMild Onion (Video)

KSDK St. Louis
February 9th, 2010

consumer qualitative research was completed by Lexicon Branding, a strategic branding and name company.

There's a new onion moving into town. "For the onion category, this is pretty rare," said David Stark, Monsanto VP Consumer Traits.

Developed by agricultural company Monsanto , the EverMild onion has a mild, sweet flavor, less likely to cause tears. David Stark peels back the layers on how the company makes it possible. "It's actually more difficult than you might think. Part of it is the breeding of the onion so it has low levels of the compound that makes us tear and gives us that harsh bite. And the other part is how it's grown. The kind of soil it's grown in, how it's managed. All of that equation we've put together in developing this new, mild onion."

It's similar to the Vidalia onion, but because the Vidalia is only available in spring and summer, Monsanto wanted to find a way to bring a sweet onion to the market place during fal and winter. "I think for people who only eat onions in the summer, now have an alternative."

The EverMild is grown in the Pacific Northwest. Stark says now consumers don't have to rely on sweet onions imported from Latin America in the off-season. "This is the very first introduction of the onion. And we started off here at Schnucks just in the Schnucks chain." Monsanto, based in Creve Couer, eventually hopes consumers Nationwide will develop a taste for the EverMild.

The EverMild is available at all Schnucks locations. Head to www.schnuckscooks.com for recipes.
